Collin’s NV Extra-Brut Les Jardin d’Ulysse (2016) continues to blossom in bottle with another year post-disgorgement, offering up aromas of citrus oil, toasted almonds, nutmeg and green apple. Medium to full-bodied, racy and chiseled, it unites all the vinous, elegantly muscular character one expects from this estate with the tension and cut derived from its predominantly north-facing exposition. With time on cork, it’s becoming simultaneously more expressive and more electric.
